Dorothy’s Potato Dumplings

Potato Dumplings

5 potatoes grated
2 Tbsp onion grated
1 ½ cup breadcrumbs
1 Tbsp flour
2 eggs beaten
dash salt and pepper

Peel and grate potatoes and squeeze liquid out of them until they are quite dry. Mix with bread crumbs, onions, flour, eggs, salt and pepper. Flour fingers and form mixture into small balls. Dredge balls lightly with flour and drop into simmering salted water. Put on top and simmer for 1 hour. Do not uncover pot.
